Signature Craft 11 Year Old Soft Red Wheat Straight Bourbon Whiskey 375ml
Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States, and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia, and was overseen by a military governor named John J. Bowman. In order to encourage westward expansion, Virginia issued pioneers who agreed to settle in Kentucky County "corn writs," which granted the pioneers 60 acres of land if they agreed to settle in Kentucky and start farming corn. After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition). Today, Fred Noe — a seventh generation master distiller and the great grandson of Colonel James B. Beam — shepherds his family legacy forward. Jim Beam Quarter Cask Bourbon is the newest release in the Jim Beam Signature Series. It is made from a blend of five and six year old Kentucky bourbons that are aged in traditional fashion, together with four, five and six year old Kentucky bourbons that have matured in quarter casks. As a result, the bourbon has an aroma of bananas, caramelized fruit, orange peel and vanilla cookies. Notes of vanilla, milk chocolate, coffee, espresso and whipped cream dominate the palate, and lead to a rich and fruity finish. Jim Beam 12 Year Old Signature Craft Bourbon Whiskey was released in 2013 and is one of the oldest bourbons Jim Beam has ever released. The bourbon has soft, sweet notes of marzipan, creamy vanilla, honey and cinnamon that are complemented by a subtle oaky undertone. In addition, the finish intensifies the notes of vanilla, caramel and oak, and is complemented by a touch of smoke. "We were able to manage the flavors just right," says Noe. Jim Beam Signature Craft Bourbon Whiskey Rare Spanish Brandy Finish is a limited edition bourbon that pays homage to a bourbon that was released in Australia. Rather than finishing the bourbon in casks that were previously used to mature brandy, Jim Beam Signature Craft Rare Spanish Brandy is made by adding a small aliquot of rare Spanish brandy to the bourbon. As a result, the bourbon has sweet notes of dates, raisins and figs that give way to graceful notes of caramel, vanilla and cinnamon. The finish is gentle and satisfying, with a crisp, sweet finish.

About the brand
The story of the Beam family is one of seven generations, more than 200 years, countless challenges and one goal; to make the best bourbon in the world. So settle in, pour yourself a bourbon and prepare to travel back in time with the First Family of Bourbon. In 1740, when the United States was still the Thirteen Colonies, the Boehm family first arrived in America, determined to live the colonial dream. Forty-eight years later, they’d relocated to where central Kentucky currently is and Americanized their German name to “Beam.” The hot summers, mild winters and nearby limestone spring made their new home ideal for … you guessed it … growing corn. Not what you were thinking? Don’t worry, the bourbon part is coming soon. By the late 1700s, German, Scotch and Irish settlers were already making rye whiskey in Western Pennsylvania with recipes they brought over from their homelands. But when the U.S. government began offering incentives to move west and grow corn, many packed up their families and relocated to the Kentucky region of Virginia(strange times, we know). Among these farmers was Jacob Beam who, like others, used his father's whiskey recipe to distill his excess corn into a new, sweeter kind of whiskey-bourbon was born. Perhaps the best decision Jacob Beam ever made was to sell his bourbon. He sold his first barrel of Old Jake Beam Sour Mash in 1795, just three years after Kentucky became a state. His bourbon quickly became a local favourite-no small accomplishment considering that, by the early 1800s, Kentucky was home to about 2,000 distillers.

Tasting Notes
Nose
The initial nose is off-putting, quite vaporous with acetone and heavy, sour sawdust. After some airing the house paint aspects dissipate and more confectionery aromas emerge with strong cherry and marzipan, Atomic Fireball, and the cinnamon clove scent of Alchermes. The oak character is fairly powerful, and it takes some dedicated nosing to work through the initial off-notes.
Taste
Entry is soft and sweet with deep cherry and almond crescent cookie notes. The wheat is most noticeable in the full, round, custardy mouth feel. The mid-palate is easy and affable, but without much complexity.
Finish
The round flavors of the mid-palate are quickly overpowered by the intense oak, segueing into a longish, unpleasant finish.
